A guest post is an article published on someone else's website under an arrangement with that publisher. It usually contains one or more links to your site. In the paid variant the publisher is compensated for the placement, which is standard practice and why it is often labelled as sponsored content.
What separates a real publication from a link farm
Three things. The site has readers who arrive without being sent by a link. The topic of the site overlaps with yours. And the article would stand on its own even without the link inside it. A site that publishes anything from anyone fails all three, no matter what its metrics say.
How fast does a guest post go live?
